La Scuola di Eataly

Earlier in the year I posted my "bucket list" of things to do in New York City - one of the items was to take a cooking class at La Scuola di Eataly.
I am finally going to do it this Spring.
 

This is the description of the Chef's Kitchen Classes at Eataly (one of several different categories available) from their web site:

"Join Eataly’s chefs and visiting guest chefs as they prepare their signature dishes, fresh pasta recipes, classic risotto preparations, and much more, before your eyes. Our chefs will demonstrate step-by-step techniques as guests enjoy everything that is prepared, paired with complementary wines."

Here is the schedule for upcoming classes...I would enjoy any of them, but a few that look amazing to me are:

The Art of Spring Risotto - with a menu which includes Suppli (Fried Risotto balls with Mozarella), Spring Vegetable Risotto with Herbs, Risotto with Shrimp and Tarragon, and Rice Pudding with Grapes and Balsamic Vinegar.

Get to Know Gnocchi - with a menu which includes Potato Gnocchi with Herb Pesto, Ricotta Gnocchi with Peas and Mint and Roman Style Semolina Gnocchi with Mushroom Ragu

Classic Roman Dishes with La Cucina Italiana Magazine - menu includes Roman Style Artichokes, Rigatone alla Gricia, Veal Saltimbocca alla Romana, Bay Leaf Biscotti
 
The small group Eat-Ineraries: Walking Tours of Eataly that are offered on Wednesday mornings also look like they would be quite fun - I would definitely enjoy seeing behind the scenes and the tastings of "foccaccia, pizza, mozarella, gelato and chocolate" along the way!
